This Enfield New Hampshire sugarhouse in autumn is ready for the spring time Sap to run. One end of the sugarhouse is stacked to the roof beams with cut firewood that will be needed in February and March as the sap begins to run. The sap will be collected from the Maple trees and brought down to the sugarhouse where I'll be boiled over fires day and night. This is a time-consuming and labor-intensive process as it takes 50 gallons of sap to make 1 gallon of dark amber maple syrup. I often wonder if there's a correlation between the number of Maple trees and the number sugarhouse is in an area. Obviously you need the Maple trees to have the sugarhouses. I never made it back to the sugarhouse the following spring to buy some of his Maple syrup but I'm sure it was quite good.
